Association is often mistaken for causation. The studies showing an association between meat consumption and ill health are all epidemiology studies. Large population groups fill in questionnaires about what they eat. These studies are notoriously unreliable – vegetarians tend to be more health-conscious than the rest of the population, smoke less, drink less, etc. Only clinical studies can prove causation.
